date night in the village

adam and i live in a great location. we are not too far from several of my favorite hang out spots in Nashville. 12 South area, Hillsboro Village, Belmont Blvd., and East Nashville are, in my opinion, some of the best places to go in Nashville if you are looking for excellent food and an energetic atmosphere full of locals. we decided that we really needed to get out the other night, so we took an impromptu date night to Hillsboro Village for dinner. one of our favorite dinner spots is Jackson’s Bar and Bistro. i almost always get the same thing at Jackson’s, but this night i was in the mood for a new, healthier option, and i am so happy i had it. i tried the Champagne Salmon Caesar. now, i love love salmon caesars, but this one had a special vinaigrette on it. my goal is to figure out how they make this dressing, so i looked it up, bought some salmon and romaine, and will let you know how it goes. if you want to give it a whirl first, you let ME know how delicious it is, or any tweaks you made. i found this recipe on Epicurious. i also included some pictures from out night out.

Makes 3/4 cup

ingredients

1 garlic clove, finely chopped
2 tablespoons dijon Mustard
1/4 cup champagne vinegar
2 tablespoons fresh lemon juice
2 tablespoons honey
2 or 3 dashes hot sauce
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup extra virgin olive oil


hillsboro village basically stretches from 21st and wedgewood to 21st and acklen

a hot spot for breakfast….come rain and snow, it doesn’t matter, people will still be wrapped around the building outside waiting for these pancakes
